Auguste Escoffier

Meisterkoch, 1846-1935

Escoffier hatte 1890 die Leitung der Küchen des weltberühmten Hotels Savoy in London übernommen und kreierte dort in den folgenden Jahren einige seiner weltberühmten Gerichte: Seezungenfilet Coquelin, flambierter Hummer (Homard à l’américaine), Geflügel à la Derby, Birne Helene und den Pfirsich Melba. Sein „Guide Culinaire“ gilt als die formale Grundlage der Kochkunst des 20. Jahrhunderts, er selbst als Schöpfer der Grande Cuisine und als der Gestalter großer Küchenorganisationen, indem er die arbeitsteilige Organisation durch Spezialisierung der Köche auf Posten effizienter machte.
