Er arbeitete auf den Gebieten der Quantenmechanik, Kernphysik und Astrophysik und war Mitentdecker des Breit-Wheeler-Prozesses, der die Erzeugung von Materie-Antimaterie-Paaren aus hochenergetischem Licht beschreibt.
Breit lehrte u. a. an der Yale University und war Mitglied im Manhattan-Projekt. Er gilt als einer der prägenden theoretischen Physiker der ersten Hälfte des 20. Jahrhunderts..
